Flour-dusted hands, the scent of sage and butter, and the sparkle of an Aperol Spritz—this is Italy at its most irresistible. Under the guidance of Chef Shane, you’ll spend the evening crafting fresh, handmade filled pasta and learning the delicate artistry that transforms humble ingredients into pure culinary magic.

You’ll prepare two classic stuffed pastas—each a love letter to Italian tradition:

  • Ravioli with lemon, ricotta, and spinach, bathed in brown butter and crisp sage.
  • Tortelloni filled with wild mushrooms and mascarpone, finished in a porcini cream sauce.

Before folding and sealing, you’ll enjoy an Aperol Spritz—that quintessential Italian aperitivo, bittersweet and sparkling with prosecco and orange zest.

As the evening winds down, gather to savour your creations, a glass in hand, celebrating the joy of simple, beautiful food.

Participants work in pairs. Please bring containers for any take-home pasta. A PICAchef apron ($25 value) is yours to keep.
