This Family-Friendly Festival of Food is in Langley City, May 13th-15th, 2022 You know it’s summer when the tempting scent of the grill starts wafting through the neighbourhood, and we are ready for it! Set your tastebud bar high, because this is not just any festival, it’s a full-on chili and BBQ cook-off. For a $5 minimum entrance donation, you’ll directly support the BC Professional Fire Fighters Association Burn Fund, as well as get delicious and spicy samples across the weekend. On Saturday, May 14th, guests will get a complimentary taste of Firehouse Chili, while those visiting on Sunday, May 15th, will get a Pumper Pulled Pork bunwich. By Executive Chef Sam Fabbro from Amaranthus INGREDIENTS Red onion (1) Garlic (4 cloves) Olive oil (1 TBS) Apple cider vinegar (250 ml) Blueberries (750 g) Water (We use house-made vegetable stock at the restaurant) (500 ml) Smoked paprika (15 g) Brown sugar (125 g) Salt & pepper to taste DIRECTIONS Fine dice the red onion and garlic. Sauté in canola oil until they just begin to brown. Deglaze pan with apple cider vinegar. (Deglazing dissolves all the flavourful browned bits of sautéed vegetables) Keep on heat and reduce vinegar by half, then add the blueberries and water. (If you have it, sub the water for vegetable stock.) Add paprika and brown sugar. Simmer for 15 minutes to allow flavour to develop. Free to attend, but with admission donations much appreciated in support of this year’s charitable partner, Tiny Kittens, the event is family-friendly. Teams of BBQ-skilled folks from BC and Saskatchewan, plus our neighbors in the USA including Washington State and Montana, compete for the grand prize of $5,000. That winner qualifies then to compete in the Jack Daniels World BBQ Championships in Tennessee, and the American Royal BBQ in Kansas City.
