Recipe: The Provence Cocktail from Copperpenny Distilling - West Coast Food

As the sun starts to set a little earlier and nights become cooler, it’s time to make the most of those last patio days. The end of the season calls for delicate floral notes and a splash of citrus.

Send off the summer with The Provence, a beautiful gin-based cocktail courtesy of the award-winning Copperpenny Distilling in North Vancouver.

  • 1.5 oz Copperpenny Gin No. 005
  • 1oz  Copperpenny Provence syrup
  • 120 ml Fever-Tree premium Indian tonic
  • Pink peppercorns
  • Spring of lavender
  • Grapefruit
  • Edible flower (for garnish)

  • Add the gin and syrup to a balloon glass
  • Stir well, fill with ice and top with Fever Tree tonic
  • Garnish and enjoy

The Provence Syrup is made in-house by Copperpenny with fresh grapefruit, French lavender and sweetened with pure cane sugar. It can be purchased at the location (and online very soon!).

If you get the chance, we recommend you try the in-house version the next time you’re ambling through the Shipyards Brewery District!

Copperpenny Distilling is located at 288 Esplanade E Unit 103, North Vancouver. Open from 3 -11 pm Tuesdays -Thursdays, 3 pm – 12 am Friday – Saturday, and 1-10 pm on Sunday.
